Pingding douyecai

Douyecai is a special dish that is made of retted bean leaf. The leaf can be found around White Dew, or bailu in Chinese, which takes place on the 15th solar term.

According to the locals, the dish is good for removing "endogenous fire" (a term in traditional Chinese medicine) and improving the functions of digestion, spleen and stomach.

The vegetable can be stir-fried or seasoned with condiments. Local residents prefer to enjoy it with sour millet.
