Sheep haslet soup originally rose to popularity in Huairen county in Datong. Locals used to wash, cook and chop sheep haslet with Chinese prickly-ash, pepper, salt, garlic, scallion and ginger, and put mutton and bean or sweet potato noodles into the soup.
