International vinegar industrial forum held in Shanxi

The first International Vinegar Innovation Forum was successfully held in Qingxu county, in Taiyuan city in Shanxi province, on Nov 7. 

The forum attracted 13 experts from 10 countries -- including Germany, South Korea and Spain and 16 experts from 10 top universities and research institutions in China -- as well as more than 50 representatives from vinegar companies from across Shanxi province. 

Organizers said the event had as its theme innovative development and international exchanges. 

They said it aimed to strengthen international technological communications and promote scientific and technological innovation, as well as professional technical personnel training in the vinegar industry.

Topics discussed at the event included the history and characteristics of international traditional fermented food, vinegar fermentation technology, fermentation waste utilization and food safety.

Regarded as the birthplace of mature Shanxi vinegar, Qingxu county is the largest vinegar production hub in China with an annual output value worth 6.5 billion yuan ($930.64 million).

Its products sell well in more than 30 provinces, autonomous regions and municipalities across the country -- and are exported to Australia, Canada, the United States, Japan and South Korea.
