Tijian noodles

To make these noodles the dough is kneaded and salt is added to it, then a needle-like tool with an eye in it is used to scrape the dough to make long thin noodles that drop off into the pot. They are often eaten with other dishes, especially fried meat, fried bean sauces, or gravy.
